Granola Energy Bars

Image
We are going to talk “ENERGY BARS” this time. As a student, that has some pretty busy days, I’ve found making something dense in calories to keep you going for a couple of hours, while being healthy as well, is the way to go. Energy bars usually consist of 4 important parts: the fibre+ carbs, the sweetener, the fats and the flavor we want to end up with. Depending on this formula, you can say that energy bars/ balls are very versatile. I’ve posted some versions before on my instagram @eatwithsteff , but today we’re going through another easy combo. Main ingredients: 1 1/2 cups of homemade cinnamon granola   3 tbsp of peanut butter  22 dates (about 1 cup) Optional ingredients to spice it up: [vegan or not] white chocolate (about 70 grams) freeze dried raspberries (just a couple of them) Preparation: 1.You start by soaking the dates in water at least 4 hours. I let them soak overnight. 2.Blend the dates, then add the peanut butter and blend again. ...

Healthy breakfast muffins

Image
For some school has already started, for others starts in a bit. Whenever school or uni starts, all students find it easier to just skip breakfast, lunch and even dinner sometimes and not eat anything throughout the day just because they‘re busier. However, having something before midday, especially when having to follow the long lectures, is very important. I always cover up recipes that you can take to school/uni suitable for breakfast, lunch and snack time. Here is one simple and easy recipe, that you can prepare on weekends and have it during the week. Something that stays between an oatmeal bite and a muffin with a healthier twist, oat based and vegan. I present to you my breakfast muffins.. Ingredients: 1 banana 1 small apple 1 medium zucchini or about 2 cups of shredded zucchini 2/3 cup of all purpose flour 2/3 cup of oat flour (homemade) 1 cup of oats 1 cup of oat milk  1/4 cup of brown sugar 2 tbsp of cacao powder 1 tsp of baking powder  1 tsp of...

No Bake Berry Cheesecake

Image
We all know Summer is here now and to be honest these days the weather is trying to boil us. However I have something sweet for all my sweet tooth babies out there, but it’s also a refreshing no-bake recipe. I think you may have guessed what it is by the title by now, but I really love this easy berry cheesecake. I love it, because I tried to add sweetness without adding too much sugar, so it’s also a slightly healthier version. Ingredients: 200 gr petit beurre biscuits  500 gr mascarpone cheese 70 gr butter 7 dates 150 gr blueberry yogurt  120 gr raspberries  2tbsp of powdered sugar  blueberries  Preparation: First we make the crust. Take a food processor or a blender and crush the biscuits into fine biscuit pieces (not too fine, so it still has the texture). Add 4 dates and the melted butter and process them together until evenly combined. Now we have the base done and proceed to flatten it completely in the bottom of the pan we...

Fruity Cheesecake

Image
The sweet tooth cravings kicked in last week and also the hot days didn’t wait for august to come. This situation will make you think of ice cream immediately, but I wanted to introduce you to something else today, that will satisfy your sweet cravings while keeping everything fresh and suitable to the season ...  Say „cheese“ to my adjustable fruity cheesecake. I love this recipe! Cheesecakes are not hard to make at all and they don’t require too much prepping either. In fact I don’t mind how perfect they come out, with crack or not, puffed or dropped down. I don’t cheeseshame and I hope you don’t either. The perfection depends on the quality of the cheese, the quality of the sugar, how much you mix it, how simple you want to make it, how well your oven works, etc, etc.  I‘m saying this because I want to let you know that nobody is always perfect, even the cheesecake, even if you follow the same recipe every time, something different might happen, but don’t get s...

Vegan Chocolate Cake

Image
As you already know I'm still eating mostly vegan, because The Great Lent hasn't ended for me yet, but you should also know that I'm a chocolate lover and I have a sweet tooth almost 23 hours/ day. That's why I came out with a decadent chocolate cake recipe the everyone should try, even if you're not vegan. I'm super serious about that ;) . Apple Strudel

Image
As I was having my usual cup of  tea,  sweet cravings came out of nowhere... Yeah, yeah, this wasn’t the first time of course, because I have a sweet tooth almost 24/7. I just like making the situation dramatic.  Well sometimes it can really get like that  and you don’t know whether to cook something ( but it would take time ) or to find quick little snacks like chocolate for example. This time I chose the first alternative, because you can prepare your daily dessert for a whole week and it doesn’t take too long to make either, so it‘s a win win situation.  I had some apples laying around and  I thought of APPLE STRUDEL right away. The last time I had apple strudel was about a year ago, so I listened to my body .. It came out soooo DELICIOUS that I demolished the half of the tray in just one day  (not guilty). Today’s recipe is APPLE STRUDEL, perfect to feed your sweet tooth cravings and to fill your heart with joy....
