Banana bread chocolate chip muffins

Image
Ok, let’s face it. Besides all the other things, quarantine came with some homemade sourdough bread and many banana breads, which compared to the first one, banana bread is way easier and faster to make.  It was around that time, that I wanted some added sweetness to my life to cheer me up and decided to follow up with the „banana bread trend“, except I aimed for some muffins instead. Banana bread chocolate chip muffins to be exact. So much procrastination went into finally getting myself to write this recipe, but now is the perfect time to reintroduce you to muffins in my opinion. Most of you are going back to school, uni or work and to be honest, a muffin and a cup of coffee or tea and maybe some fruit on the side is one of the best „to go“ breakfasts I can think of. Before I get into the recipe, I wanted to say, that I‘ve simplified everything to the point, where you need only a fork, two bowls and an oven to make these muffins. Of course using a whisk, a silicone spatula...

Winter Truffles

The winter special recipe for 2019 is finally  here and with this post I’d like to send as much love as possible to every single one of you. It’s not something too fancy or with a longer list of ingredients than the Santa’s, but the reason it’s earned the “winter special” label are the wintery ingredients it has. When I think of winter, many festive dishes come to my mind, but a couple simple things still stand out and those are: chestnuts, wine or any kind of liqueur, berries, chocolate & cookies. So I thought of some wintery truffles you can make with all of them. I tried many variations till I found the perfect combo. This is why it has taken me more than one month to finally love the recipe and to see it as share-worthy. Whether you make it for Christmas or New Year’s Eve or even as a gift for whatever occasion this cold season, you choose, it will be the easiest treat you’ve ever made and I’m sure it will become one of your favorites too. Ingredients: 2...

Vegan fudgy brownies with mango ice cream

Image
It’s me! Again!  ️ I’m revealing my secret valentine’s day recipe tonight as I promised on my last post. So as I was thinking what recipes I should do for Valentine’s Day and I already had found one ( tiramisu truffles ) I realized that it was not suitable for everyone. So this next recipe had to be gluten free, dairy free and VEGAN . That’s why I chose to make the most decadent brownies & the easiest mango ice cream that you can make.  Ingredients:  For the brownies: 1 can of black beans  4 tbsp of oat flour 1 tbsp of peanut butter 2 tbsp of sunflower seed oil  1 tsp of baking soda 100 gr of sugar  70 gr of cocoa powder  100 gr of thinly chopped dark chocolate (non dairy)  For the mango ice cream:  1 ripe mango  1/2 cup of mango compote ( or you replace it with peach compote ) 1/2 banana 1 tbsp of coconut oil  2 tbsp of coconut milk   Preparation:  For the mango ice cream [ I...

Image
I was laying on my bed last night and all of a sudden I remembered that this week is the “ Valentine’s Day ️  ” so I had to do some kind of Valentine Treat. It was a bit difficult to think the perfect recipes right away, but an ingredient was definitely going to be CHOCOLATE. As a chocolate lover (in my head) love is equal to chocolate or the other way around.  So I came up with two ideas, but for now one of them will remain a secret. Today I prepared my CHOCOLATE COVERED TIRAMISU LOVE BITES. These are the perfect treat and a perfect gift (if you haven’t figured it out till now ), yet so easy to prepare.  Ingredients:  1.5 cups mascarpone cheese  3 cups of roughly crumbled biscuits  3 tbsp of amaro liqueur  2 tbsp of almond milk  2 tbsp of cocoa powder  3-4 tbsp of powdered sugar (taste to adjust it to your likings)  1/2 tsp of vanilla extract  For the chocolate cover:  200 gr of chocolate  2 tb...
