Banana bread chocolate chip muffins

Image
Ok, let’s face it. Besides all the other things, quarantine came with some homemade sourdough bread and many banana breads, which compared to the first one, banana bread is way easier and faster to make.  It was around that time, that I wanted some added sweetness to my life to cheer me up and decided to follow up with the „banana bread trend“, except I aimed for some muffins instead. Banana bread chocolate chip muffins to be exact. So much procrastination went into finally getting myself to write this recipe, but now is the perfect time to reintroduce you to muffins in my opinion. Most of you are going back to school, uni or work and to be honest, a muffin and a cup of coffee or tea and maybe some fruit on the side is one of the best „to go“ breakfasts I can think of. Before I get into the recipe, I wanted to say, that I‘ve simplified everything to the point, where you need only a fork, two bowls and an oven to make these muffins. Of course using a whisk, a silicone spatula...

Granola Energy Bars

Image
We are going to talk “ENERGY BARS” this time. As a student, that has some pretty busy days, I’ve found making something dense in calories to keep you going for a couple of hours, while being healthy as well, is the way to go. Energy bars usually consist of 4 important parts: the fibre+ carbs, the sweetener, the fats and the flavor we want to end up with. Depending on this formula, you can say that energy bars/ balls are very versatile. I’ve posted some versions before on my instagram @eatwithsteff , but today we’re going through another easy combo. Main ingredients: 1 1/2 cups of homemade cinnamon granola   3 tbsp of peanut butter  22 dates (about 1 cup) Optional ingredients to spice it up: [vegan or not] white chocolate (about 70 grams) freeze dried raspberries (just a couple of them) Preparation: 1.You start by soaking the dates in water at least 4 hours. I let them soak overnight. 2.Blend the dates, then add the peanut butter and blend again. ...

Apple Strudel

As I was having my usual cup of  tea,  sweet cravings came out of nowhere... Yeah, yeah, this wasn’t the first time of course, because I have a sweet tooth almost 24/7. I just like making the situation dramatic.  Well sometimes it can really get like that  and you don’t know whether to cook something ( but it would take time ) or to find quick little snacks like chocolate for example. This time I chose the first alternative, because you can prepare your daily dessert for a whole week and it doesn’t take too long to make either, so it‘s a win win situation.  I had some apples laying around and  I thought of APPLE STRUDEL right away. The last time I had apple strudel was about a year ago, so I listened to my body .. It came out soooo DELICIOUS that I demolished the half of the tray in just one day  (not guilty). Today’s recipe is APPLE STRUDEL, perfect to feed your sweet tooth cravings and to fill your heart with joy....

Cinnamon Rolls

Winter hasn't ended yet and in addition these days it is becoming harsher where I live. So what do you do to overcome a cloudy & rainy day especially when it's super cold outside ?!   For me it always has to be a lazy day, whether I have school or not. I just get up tired and I'm all day sleepy, so what I love to do is wrapping myself in a soft & fluffy blanket and drink a cup of tea (maybe two or three) with a side of a delicious cinnamony dessert.   Did I just say DELICIOUS CINNAMONY DESSERT?!   Let me tell you a secret. My house has been smelling like cinnamon just broke into for the past week, because if you haven't guessed it yet, I made the most delicious cinnamon rolls and to be honest I like the aroma I get to experience every time I enter into my house. Rewinding back to my cinnamon rolls and their texture, all I can say is, that when you take a bite, you experience it all. You get the soft dough, the crunchiness of some non me...
