Granola Energy Bars
We are going to talk “ENERGY BARS” this time. As a student, that has some pretty busy days, I’ve found making something dense in calories to keep you going for a couple of hours, while being healthy as well, is the way to go.
Energy bars usually consist of 4 important parts: the fibre+ carbs, the sweetener, the fats and the flavor we want to end up with. Depending on this formula, you can say that energy bars/ balls are very versatile.
I’ve posted some versions before on my instagram @eatwithsteff , but today we’re going through another easy combo.
Main ingredients:
- 1 1/2 cups of homemade cinnamon granola
- 3 tbsp of peanut butter
- 22 dates (about 1 cup)
Optional ingredients to spice it up:
- [vegan or not] white chocolate (about 70 grams)
- freeze dried raspberries (just a couple of them)
Preparation:
1.You start by soaking the dates in water at least 4 hours. I let them soak overnight.
2.Blend the dates, then add the peanut butter and blend again.
3.Combine the granola and the blended mixture.
4.Line a flat tray with parchment paper and flatten the granola mixture onto it. Let it rest in the fridge for at least 30 minutes.
5.Meanwhile take the white chocolate and melt it carefully in the microwave by stopping & stirring once every 30-40 seconds.
6.When the chocolate is melted, take the granola mixture out from the fridge and cut it in little bars. I made 20 in total.
7.Drizzle the chocolate and then crush some raspberries on top. Let the chocolate harden and DONE!
Since I'm following the fasting rules for the Great Lent before Easter, that shortly I can describe as mostly plantbased (vegan) with a couple exceptions, I used vegan chocolate. It is delicious either way and the raspberries balance all the sweetness from the bars and the chocolate out. You can take them with you the next day at work, uni, enjoy them as a boost of energy while you’re studying or just to satisfy your sweet cravings.
