No Bake Berry Cheesecake
We all know Summer is here now and to be honest these days the weather is trying to boil us.
However I have something sweet for all my sweet tooth babies out there, but it’s also a refreshing no-bake recipe.
I think you may have guessed what it is by the title by now, but I really love this easy berry cheesecake. I love it, because I tried to add sweetness without adding too much sugar, so it’s also a slightly healthier version.
Ingredients:
- 200 gr petit beurre biscuits
- 500 gr mascarpone cheese
- 70 gr butter
- 7 dates
- 150 gr blueberry yogurt
- 120 gr raspberries
- 2tbsp of powdered sugar

Preparation:
First we make the crust. Take a food processor or a blender and crush the biscuits into fine biscuit pieces (not too fine, so it still has the texture). Add 4 dates and the melted butter and process them together until evenly combined.
Now we have the base done and proceed to flatten it completely in the bottom of the pan we’re using.
Then we’ll continue with the cheese part.
First the yogurt mixture.. ▶️The yogurt mixture will be yogurt, 3 tbsp mascarpone, raspberries and 3 dates blended together.
You can also combine everything together, but I took it a step further and made it an ombré cheesecake.
*If you combine everything together, check the texture and figure out if you‘ll need any gelatin to keep it’s shape. The ombré way doesn’t need any added gelatin.*
Start with half of the remaining mascarpone, add the sugar and spread it carefully on top of the biscuit layer. This is the thickest layer (texture-wise), so it will be hard to spread and scooping it evenly at first may help you a lot.
Then take 2/3 of the remaining mascarpone and mix it with 1/3 yogurt mixture. This will be the next layer.
Take the last portion of mascarpone and mix it with 2/3 yogurt mixture.
This is the top layer and you can make some swirls with a spoon and some more dabs of yogurt ob top. Have fun with that !!

Let it set in the fridge overnight or at least 4 hours and then top it off with some fresh blueberries.
I believe this is one of the best cheesecakes I‘ve ever created, because of how beautiful and slightly lighter it is.
