Apple Strudel

Image
As I was having my usual cup of  tea,  sweet cravings came out of nowhere... Yeah, yeah, this wasn’t the first time of course, because I have a sweet tooth almost 24/7. I just like making the situation dramatic.  Well sometimes it can really get like that  and you don’t know whether to cook something ( but it would take time ) or to find quick little snacks like chocolate for example. This time I chose the first alternative, because you can prepare your daily dessert for a whole week and it doesn’t take too long to make either, so it‘s a win win situation.  I had some apples laying around and  I thought of APPLE STRUDEL right away. The last time I had apple strudel was about a year ago, so I listened to my body .. It came out soooo DELICIOUS that I demolished the half of the tray in just one day  (not guilty). Today’s recipe is APPLE STRUDEL, perfect to feed your sweet tooth cravings and to fill your heart with joy....

Vegan fudgy brownies with mango ice cream

It’s me! Again!  ️ I’m revealing my secret valentine’s day recipe tonight as I promised on my last post. So as I was thinking what recipes I should do for Valentine’s Day and I already had found one ( tiramisu truffles ) I realized that it was not suitable for everyone. So this next recipe had to be gluten free, dairy free and VEGAN . That’s why I chose to make the most decadent brownies & the easiest mango ice cream that you can make.  Ingredients:  For the brownies: 1 can of black beans  4 tbsp of oat flour 1 tbsp of peanut butter 2 tbsp of sunflower seed oil  1 tsp of baking soda 100 gr of sugar  70 gr of cocoa powder  100 gr of thinly chopped dark chocolate (non dairy)  For the mango ice cream:  1 ripe mango  1/2 cup of mango compote ( or you replace it with peach compote ) 1/2 banana 1 tbsp of coconut oil  2 tbsp of coconut milk   Preparation:  For the mango ice cream [ I...

Chocolate covered tiramisu LOVE BITES

Image
I was laying on my bed last night and all of a sudden I remembered that this week is the “ Valentine’s Day ️  ” so I had to do some kind of Valentine Treat. It was a bit difficult to think the perfect recipes right away, but an ingredient was definitely going to be CHOCOLATE. As a chocolate lover (in my head) love is equal to chocolate or the other way around.  So I came up with two ideas, but for now one of them will remain a secret. Today I prepared my CHOCOLATE COVERED TIRAMISU LOVE BITES. These are the perfect treat and a perfect gift (if you haven’t figured it out till now ), yet so easy to prepare.  Ingredients:  1.5 cups mascarpone cheese  3 cups of roughly crumbled biscuits  3 tbsp of amaro liqueur  2 tbsp of almond milk  2 tbsp of cocoa powder  3-4 tbsp of powdered sugar (taste to adjust it to your likings)  1/2 tsp of vanilla extract  For the chocolate cover:  200 gr of chocolate  2 tb...

Winter Salad

Image
We are on February now and winter has less than one month left to go, but I want to share some of my winter favorites already. One of them is my easy winter salad and I have been obsessed with it for the past month. I wouldn’t call it a recipe, but a delicious food & flavor combination, because that’s what it really is. There is a fine line between an overboard heavy salad & a really easy light one. I must say that I do prefer the lighter salads with an easy salad dressing even when the salad is my main & only course for lunch or dinner. However I like experimenting with heavier and fuller salads now and then, so you’ll also see other “food combining” posts and salad recipes that might take a little more effort to make.  Today’s salad consists of:  1/2 head of lettuce  1/2 lemon 2 radishes 1 small apple 1/2 cucumber  1/4 onion   salt, lemon juice & olive oil (for the dressing) As you can see it is really s...
