Vegan fudgy brownies with mango ice cream

I’m revealing my secret valentine’s day recipe tonight as I promised on my last post. So as I was thinking what recipes I should do for Valentine’s Day and I already had found one ( tiramisu truffles ) I realized that it was not suitable for everyone. So this next recipe had to be gluten free, dairy free and VEGAN. That’s why I chose to make the most decadent brownies & the easiest mango ice cream that you can make.
Ingredients:
For the brownies:
1 can of black beans
4 tbsp of oat flour
1 tbsp of peanut butter
2 tbsp of sunflower seed oil
1 tsp of baking soda
100 gr of sugar
70 gr of cocoa powder
100 gr of thinly chopped dark chocolate (non dairy)
For the mango ice cream:
1 ripe mango
1/2 cup of mango compote ( or you replace it with peach compote )
1/2 banana
1 tbsp of coconut oil
2 tbsp of coconut milk
Preparation:
For the mango ice cream [ I recommend to make this first because it takes more time to freeze. If you want to consume this right after you make it, then I recommend to prepare the mango ice cream 1 hour in advance. ]
Add all the ingredients to a blender and blend until smooth. Add the mixture to an ice cream tray and put it on the freezer.
Now we will prepare the brownies..
Preheat the oven to 180°C
Add all the ingredients besides the chopped chocolate to a blender (make sure you clean it from the mango ice cream mixture) and blend until smooth.
It should look like this ..
Now add the thinly chopped dark chocolate and mix it well.
Oil the pan that you’re using and then add the brownie mixture.
It’s time to put it on the oven and wait 20-25 minutes for it to be ready.
After it’s done let it cool down and cut it to how many pieces you want. Serve it with a scoop of mango ice cream on top and drizzle it with some melted dark chocolate.
