Falafel Recipe

  A very tasty way to prepare chickpeas is to make falafels. All the herbs, spices and the crunchiness on the outside make them the perfect protagonist of a mediterranean dining table.  Also a great substitute for meatballs for my meat-lovers out there.  Falafels are for people who love flavor, very easy to make and if you meal prep, you can easily make them in bulk and consume them later (I‘ll write about how you can do this in the end). Red Cabbage Risotto

  It all began in the winter time. I was sitting comfortably on my bed and I was writing a list of winter veggies and fruits, that I wanted to include on my diet, but also make a Youtube video about it.  I‘m someone who‘ll always consider something seasonal first. I decided to take the red cabbage as a main ingredient and then form a recipe around it. So after a bit of brain storming and one semi-failed recipe, I came up with a risotto recipe, that I‘d like to have not only during the winter. That meant it was a success and also, who doesn’t love a bowl of comfort food. I‘ve been having it on the chillier days of April.   Ok, let’s face it. Besides all the other things, quarantine came with some homemade sourdough bread and many banana breads, which compared to the first one, banana bread is way easier and faster to make.  It was around that time, that I wanted some added sweetness to my life to cheer me up and decided to follow up with the „banana bread trend“, except I aimed for some muffins instead. Banana bread chocolate chip muffins to be exact. So much procrastination went into finally getting myself to write this recipe, but now is the perfect time to reintroduce you to muffins in my opinion. Most of you are going back to school, uni or work and to be honest, a muffin and a cup of coffee or tea and maybe some fruit on the side is one of the best „to go“ breakfasts I can think of. Granola Energy Bars

We are going to talk “ENERGY BARS” this time. As a student, that has some pretty busy days, I’ve found making something dense in calories to keep you going for a couple of hours, while being healthy as well, is the way to go. Energy bars usually consist of 4 important parts: the fibre+ carbs, the sweetener, the fats and the flavor we want to end up with. Depending on this formula, you can say that energy bars/ balls are very versatile. I’ve posted some versions before on my instagram @eatwithsteff , but today we’re going through another easy combo. The winter special recipe for 2019 is finally  here and with this post I’d like to send as much love as possible to every single one of you. It’s not something too fancy or with a longer list of ingredients than the Santa’s, but the reason it’s earned the “winter special” label are the wintery ingredients it has. When I think of winter, many festive dishes come to my mind, but a couple simple things still stand out and those are: chestnuts, wine or any kind of liqueur, berries, chocolate & cookies. So I thought of some wintery truffles you can make with all of them. I tried many variations till I found the perfect combo. This is why it has taken me more than one month to finally love the recipe and to see it as share-worthy. BOO-Mini pumpkin pies

Happy Halloween everybody!! The real sweet treat is here for you now. As you may guess from the title and the photo, we’re making ghost mini pumpkin pies. This recipe is so easy to make and it comes out delicious. I‘d consider this one as your halloween-saver recipe. Ingredients: For the crust: -1 full cup of flour  -1/3 cup of butter (diced)  -1 tbsp of sugar -a pinch of salt -2 tbsp ice cold water For the filling: -1 1/2cups of pumpkin purée  -150 gr heavy cream -2 tbsp white sugar -4 tbsp brown sugar -1 egg -1 tbsp ground cinnamon  -1 tsp ground clove -1/2 tsp  ground nutmeg -1/2 tsp vanilla syrup  -a pinch of salt For the topping: -whipped cream -30 gr dark chocolate  Preparation: -Begin by mixing the dough ingredients (besides the water) in a  bowl with a fork. Halloween Edition: Cheese filled snake

Halloween is nearly here and I wanted to come this year with two recipe ideas. This one, that I‘m going to share tonight is the savory one. I was thinking a lot before I came up with this idea and to be honest spiders are going to be all over the halloween snacks, so the next best thing was a snake. A cheesy, doughy, saucy snake.. So I went, tried it and it came out definitely delicious. Now before we get started I have to make it clear that we are making 2 parts of dough, one part normal and one part with some kind of color to make it more interesting. *!! This doesn’t mean the color  will show up on top, whatever you use, whether it’s charcoal, spirulina or food coloring, it will still have the „doughy hue“ on top.
