BOO-Mini pumpkin pies
Happy Halloween everybody!!
The real sweet treat is here for you now. As you may guess from the title and the photo, we’re making ghost mini pumpkin pies.
This recipe is so easy to make and it comes out delicious. I‘d consider this one as your halloween-saver recipe.
Ingredients:
For the crust:
-1 full cup of flour
-1/3 cup of butter (diced)
-1 tbsp of sugar
-a pinch of salt
-2 tbsp ice cold water
For the filling:
-1 1/2cups of pumpkin purée
-150 gr heavy cream
-2 tbsp white sugar
-4 tbsp brown sugar
-1 egg
-1 tbsp ground cinnamon
-1 tsp ground clove
-1/2 tsp ground nutmeg
-1/2 tsp vanilla syrup
-a pinch of salt
For the topping:
-whipped cream
-30 gr dark chocolate
Preparation:
-Begin by mixing the dough ingredients (besides the water) in a bowl with a fork. Use the fork to press into the butter & flour and make a crumbly mixture. Stop „mashing“ when you believe everything is evenly mixed and incorporated.
-Time to use our hands. Add 2 tbsp of ice cold water and work it into a ball of dough.
Wrap it in a plastic wrap and let it rest in the fridge for 40 minutes.
-Meanwhile start making the filling. I made the pumpkin pure at home by boiling pumpkin chunks and then puréeing them.
-Then mix every filling ingredient into a bowl and when the dough is ready, proceed to flatten it evenly until it thins out to about 0,5 cm. Normally we would go thicker, but these are mini ones.
-Preheat the oven to 190°C and continue with the recipe.
-Cut big circles and fit them inside the silicone cups. Fill them with about 3 tbsp each.
This recipe makes exactly 6 mini pumpkin pies.
-Bake them in 190°C for 15 minutes and then lower the temperature to 180°C and bake them for 20 more minutes.
-In the mean time melt the chocolate and on a parchment paper form dots to match the ghost eyes and mouth. Put them in the fridge to set.
-After the pies are done, let them cool down for 15 minutes and then serve them with whipped cream and the chocolate ghost features on top.
Optional: spread some of the chocolate in the middle and then top them of with whipped cream.
