Falafel Recipe

 A very tasty way to prepare chickpeas is to make falafels. All the herbs, spices and the crunchiness on the outside make them the perfect protagonist of a mediterranean dining table. Also a great substitute for meatballs for my meat-lovers out there. 

Falafels are for people who love flavor, very easy to make and if you meal prep, you can easily make them in bulk and consume them later (I‘ll write about how you can do this in the end).

Ingredients:

  • 2 cups of dry chickpeas 
  • 1 cup of edamame beans
  • 1,5 cups of fresh parsley 
  • 1,5 cups of fresh cilantro 
  • 1 cup of fresh dill
  • 2 tbsp of tahini
  • 2 tbsp of cumin
  • 1/2 medium onion
  • 6-8 cloves of garlic 
  • 1 tsp baking powder 
  • 1 tbsp ground pepper 
  • 1-2 tbsp salt 
  • (optional) 2 tbsp toasted sesame seeds
  • oil for frying

1.The preparation for this recipe begins the night before by soaking the chickpeas in a big bowl of water.

2.After soaking them in water they should have expanded in size. Drain the chickpeas and set them aside.

3.All you need to do now is blend. You can do it in one go if you have a food processor. 

4.However if you don’t have one, you can use your smoothie blender by splitting the recipe in two.

After you’re done with all the blending, add the baking powder and mix.

5.Put the mixture into a bowl and let it chill for at least an hour.

6.Form little balls or patties with the help of your hand palms and fry them in hot oil until they get brown and crispy.

7.Lay them in a bowl with a paper towel to get all the excessive oils.

Enjoy them with pita pockets, some hummus, avocado, shredded cabbage and carrots (well seasoned) and some tomato slices. 

You can make falafels in bulk and eat them later. 

One way to do it is to fry them till they are golden brown and put them in the fridge or freezer. When you’re ready to consume them, you can quickly bake them to crisp them up and enjoy them freshly out of the oven.

You can also freeze the uncooked falafels and you let them thaw a bit before deciding to fry them.
