Homemade Granola

Have you ever skipped breakfast because of the lack of time in the morning? Have you ever searched for excuses for not eating healthy?  Well now you can prevent these two problems by making some homemade granola on the weekend, that will last you for a whole week and will motivate you to eat healthier. Now, a question may come on your mind. „Why can’t I buy some pre-made store-bought granola ?”  Firstly you know exactly what you’re putting in the recipe + you can adjust it to your likings. Less sugar, less oil, your favorite nuts and seeds, your favorite flavor: cinnamon, orange zest, dried fruit, etc. So it’s definitely healthier.  Secondly you can make as much as you want and it’s fresher than the ones on the store. My Top 4 Smoothie Bowls

Smoothie bowls were my signature post on my instagram ( @eatwithsteff ) until my blender broke. At the moment I’m really missing them, because they were my favorite thing to make.  In fact smoothies are the best way to start your day, because the best time to eat fruit is in the morning [ the fructose in the morning is the best fuel for your brain and the best food for your digestion as it’s full of fiber ] + your body feels lighter and full of energy at the same time.  Here are my top 4 smoothie bowls:  The first one is „The Sunshine“ smoothie, which consists of: 1 cup of frozen mango, 1 frozen banana, 1 persimmon, 1/2 orange and 100 ml of soy milk. I topped it with some extra diced persimmon, chia seeds, pumpkin seeds and shredded coconut. The second one is „The Berry Cotton Candy“ smoothie, which consists of: 1,5 frozen banana, 5 frozen strawberries, 1/4 cup of frozen blackberries, 1 tbsp of chia seeds and 150 ml of almond milk. Creamy Vegan Cheese

The Great Lent was pretty awesome. I‘ve been wanting to do it for so long and luckily my mom agreed with me this year. As I said on my last posts, I didn’t decide to follow The Lent for religious reasons more than I just wanted to try eating vegan for 7 weeks and try to be healthier. In fact my mom and I have come to a conclusion that eating vegan can be really eye opening and a good way of introduction to many new recipes or just simple and delicious recipes that we usually forget about. I tried to write down as many recipes as I could so I can share them here with you.  As for today’s recipe I tried a vegan „cheese“ one by making it the simplest and the most inexpensive there could be online and still reaching the creaminess of melted cheese, cream cheese or ricotta cheese. Vegan Chocolate Cake

As you already know I'm still eating mostly vegan, because The Great Lent hasn't ended for me yet, but you should also know that I'm a chocolate lover and I have a sweet tooth almost 23 hours/ day. That's why I came out with a decadent chocolate cake recipe the everyone should try, even if you're not vegan. I'm super serious about that ;) . Ingredients: • 200 g flour • 200 g sugar • juice and zest of 1 orange (about 120 ml) • 2 tablespoons of tahini • 1/2 cup sunflower seed oil • 1 tsp of vanilla • 1 teaspoon of baking soda • 125 g dark chocolate finely chopped (or dark chocolate chips ) • 5-6 tablespoons of cocoa  For the syrup • 3/4 cup of water • 3/4 cup of sugar   For the ganache • 250 g dark chocolate • 150 g water • 1 tablespoon of cognac Preparation: In a bowl add & mix   the flour, cocoa, sugar and the baking soda.   In an other bowl beat the oil with the tahini using the mixer.
