Vegan apple strudel PANCAKES

Do you ever associate days of the week with certain foods? Well I’m really guilty of doing it very often and I think that’s a way of finding a reason to celebrate every day. 
Even though these choices usually are kind of unhealthy, you still get to satisfy yourself with only one meal, which is really good for your mental health and to avoid binge eating all day, all week. 
Today is Saturday and to me that screams PANCAKES! 
Since it’s Veganuary (vegan January) this recipe is totally vegan plus it has a healthier twist to not feel too guilty [which shouldn’t happen anyways].
As for the flavor, I’ve been loving apple strudel this winter and these pancakes are apple strudel inspired. A big plus is not only the flavor, but also the FLUFFINESS!!

So let’s jump into the actual recipe..

All you‘ll need for the pancakes is:
  • 2/3 cup of oats
  • 1/2 cup of flour 
  • 1/2 ripe banana
  • 1/3 apple 
  • 3/4 cup of almond milk 
  • 1 tbsp cinnamon 
  • 1 tbsp baking powder 

Other ingredients:
  • 2/3 apple as a topping 
  • oil for the pan 
  • syrup as a topping 

Preparation: 
  • Start by pulverizing the oats into oat flour with the help of a blender.

  • Next, add the flour, cinnamon and baking powder into the blender and pulse it 3-4 times.
  • Now, I like removing the dry mixture into a bowl to continue the next step. You don’t need to clean it up, just continue by adding 1/3 of an apple  and 1/2 of a ripe banana and a splash of almond milk (about 1/4 of a cup). 

  • Next, add the dry mixture back in stir it with a spoon and add almond milk until it reaches the right consistency (about 1/2 a cup). 
  • Don’t mix it to much, just pulse it 2-3 times in the blender, give it a last stir/fold only if you can still see that it's unmixed and the pancake batter is done 


  • Heat a pan to a medium-high heat and add your favorite kind of oil by brushing it with a piece of paper towel. This will remove the access oil. And don’t forget to repeat the oiling process at least after every two rounds. 
  • Scoop 2-3 tbsp for a pancake depending on how big you like them. 
  • TIP: The secret to a perfectly cooked pancake is the medium heat and as you go on, notice when the pan is too hot and turn down the heat just a little.  
  • Flip them when little bubbles start showing up on top.
  • After you have your pancakes ready, lay them into a plate and continue with the topping preparation.

  • Cut the apple into apple chunks and sauté them until golden brown. If you want you can add brown sugar, but mine was pretty sweet.
Now it’s time to plate them. Place the apple chunks on top of the pancakes, add a dash of cinnamon and drizzle agave syrup or any kind of syrup you like. 

As you may have noticed they don’t have added sugar and all you need to make them is a blender, a bowl and a pan. Pretty simple and easy. The fluffiness is real and that apple & cinnamon aroma knocks you down.
